Ingredients

  • 2 large eggs
  • 1 ripe avocado, halved and pitted
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp feta cheese, crumbled
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

    Bring a pot of water to a gentle simmer. Carefully add eggs and cook for 6-7 minutes for soft-boiled eggs.

    While eggs are cooking, scoop avocado into a bowl and mash lightly with a fork.

    Add halved cherry tomatoes to the bowl.

    Drain eggs and run under cold water. Peel and slice in half.

    Place eggs on top of the avocado mixture.

    Sprinkle with feta cheese, drizzle with olive oil and lemon juice.
