Ingredients
- •1 lb chicken breast, sliced into strips
- •1 red bell pepper, sliced
- •1 green bell pepper, sliced
- •1 yellow bell pepper, sliced
- •1 onion, sliced
- •2 tbsp olive oil
- •2 tsp chili powder
- •1 tsp cumin
- •1 tsp paprika
- •1/2 tsp garlic powder
- •Salt and pepper to taste
- •2 cups cooked brown rice
- •Lime wedges, avocado, and cilantro for serving

In a small bowl, mix chili powder, cumin, paprika, garlic powder, salt, and pepper.

Toss chicken strips with 1 tbsp olive oil and half of the spice mixture.

Heat a large skillet over medium-high heat and cook chicken until no longer pink, about 5-7 minutes. Remove from pan.

Add remaining olive oil to the pan and sauté peppers and onions until tender, about 5-7 minutes.

Return chicken to the pan, add remaining spice mixture, and stir to combine.
