A low-carb version of fried rice using cauliflower instead of traditional rice.

Ingredients
- •1 medium cauliflower head, riced
- •2 eggs, beaten
- •1 cup mixed vegetables (peas, carrots, corn)
- •3 green onions, sliced
- •2 cloves garlic, minced
- •1 tbsp ginger, grated
- •2 tbsp low-sodium soy sauce
- •1 tbsp sesame oil
- •1 tbsp olive oil
- •Optional: cooked chicken, shrimp, or tofu
Instructions

Heat olive oil in a large skillet or wok over medium-high heat.

Add beaten eggs and scramble until cooked. Remove from pan and set aside.

In the same pan, add garlic and ginger, stir for 30 seconds until fragrant.

Add mixed vegetables and cook for 3-4 minutes until tender.

Add cauliflower rice and cook for 5-6 minutes until tender but not mushy.

Return eggs to the pan, add soy sauce and sesame oil, and stir to combine.
