Ingredients

  • 2 ripe bananas
  • 2 eggs
  • 1 cup rolled oats
  • 1/4 cup milk of choice
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • Pinch of salt
  • 1 tbsp coconut oil for cooking
  • Toppings: fresh fruit, nuts, maple syrup

Instructions

    In a blender, combine bananas, eggs, oats, milk, vanilla, cinnamon, baking powder, and salt.

    Blend until smooth and let the batter rest for 5 minutes.

    Heat coconut oil in a non-stick pan over medium heat.

    Pour 1/4 cup of batter for each pancake and cook for 2-3 minutes until bubbles form.
