Ingredients

  • 1/2 cup cooked quinoa
  • 2 cups mixed greens
  • 1/4 cup cucumber, diced
  • 1/4 cup bell peppers, diced
  • 2 tbsp red onion, thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • Salt and pepper to taste
