Ingredients

  • 2 large zucchini, spiralized
  • 2 chicken breasts
  • 2 tbsp olive oil, divided
  • 2 cloves garlic, minced
  • 1/4 cup basil pesto
  • 1/4 cup cherry tomatoes, halved
  • 2 tbsp pine nuts, toasted
  • 2 tbsp grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

    Season chicken breasts with salt and pepper. Grill until internal temperature reaches 165°F, about 6-7 minutes per side.

    Let chicken rest for 5 minutes, then slice.

    Heat 1 tbsp olive oil in a large skillet over medium heat. Add garlic and cook for 30 seconds.
