- •1 can (15 oz) black beans, drained and rinsed
- •1 tbsp olive oil
- •1 tsp cumin
- •1 tsp chili powder
- •1/2 tsp paprika
- •1/4 tsp cayenne pepper (optional)
- •1/2 red onion, diced
- •2 cloves garlic, minced
- •8 small corn tortillas
- •Toppings: avocado, cilantro, lime, salsa

Preheat oven to 425°F (220°C).

Toss sweet potato with olive oil, half the spices, salt, and pepper. Spread on a baking sheet.

Roast for 20-25 minutes until tender and slightly crispy.

In a skillet, sauté onion and garlic until soft. Add black beans and remaining spices.
