Ingredients

  • 1 large sweet potato, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 red onion, diced
  • 2 cloves garlic, minced
  • 8 small corn tortillas
  • Toppings: avocado, cilantro, lime, salsa

Instructions

    Preheat oven to 425°F (220°C).

    Toss sweet potato with olive oil, half the spices, salt, and pepper. Spread on a baking sheet.

    Roast for 20-25 minutes until tender and slightly crispy.

    In a skillet, sauté onion and garlic until soft. Add black beans and remaining spices.

    Cook for 5 minutes, mashing some beans slightly for texture.

    Warm tortillas in a dry skillet or in the oven.
