Ingredients

  • 6 oz salmon fillet
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 medium carrot, sliced
  • 1 tbsp olive oil
  • 1 lemon, half juiced and half sliced
  • 2 cloves garlic, minced
  • 1 tsp dried herbs (thyme, rosemary, or dill)
  • Salt and pepper to taste

Instructions

    Preheat oven to 400°F (200°C).

    Toss vegetables with olive oil, garlic, salt, and pepper. Spread on a baking sheet.

    Roast vegetables for 10 minutes.

    Place salmon on the baking sheet with vegetables. Season with salt, pepper, and dried herbs.
