Ingredients

- •1 cup cauliflower florets
- •1 medium carrot, sliced
- •1 tbsp olive oil
- •1 lemon, half juiced and half sliced
- •2 cloves garlic, minced
- •1 tsp dried herbs (thyme, rosemary, or dill)

Preheat oven to 400°F (200°C).

Toss vegetables with olive oil, garlic, salt, and pepper. Spread on a baking sheet.
